Mongolian Beef & Cauliflower Fried Rice

Let's first point out that these tuna cakes are very diet friendly. Can be used while on the keto, or paleo, and atkins diet.


Ingredients


  • 1 lb flank steak sliced into bite-size stripes

  • 2 tbsp olive oil

  • 1 tbsp fresh ginger peeled and grated

  • 2 garlic cloves minced

  • 2 tbsp coconut aminos

  • 1/2 cup water

  • 1/3 cup stevia in the RAW

  • 5 teaspoon chili paste (use as like, I like the spice)

  • 1 teaspoon red pepper flakes

  • salt and pepper to taste

  • 1 scallion sliced

  • soy sauce

  • 1 fresh bag cauliflower prepped fried rice



Instructions


THE BEEF:

  1. In a saucepan or wok heat half of olive oil, add minced garlic and grated ginger and fry for 30 seconds. (add flavors of garlic and ginger to taste of your liking)

  2. Add water, coconut aminos, chili paste, red pepper flakes and simmer on high for 3-4 minutes.

  3. Turn off the heat and set aside.

  4. In another pan, heat the other half of olive oil until hot.

  5. Add beef strips and fry stirring until begin to get brown.

  6. Set aside.

  7. In the beef pan add the sauce, scallions, a pinch of salt and pepper and cook for another minute stirring constantly. so sauce doesn't burn



THE RICE:

The rice is pretty simple being that the bag is already prepped

  1. Set stove to a medium setting

  2. In frying pan add cauli mix and a little soy sauce.

  3. begin to heat

  4. Stir fry and add soy as needed until desired flavor is achieve

beef can also be served with steamed broccoli florets or fresh cauliflower
